Sizzling Sichuan Noodles

Ingredients

  • 2 Tsp Sichuan Peppercorns
  • 6 Cloves of Garlic
  • 20 g Ginger
  • 3 Tbsp Dark Soy Sauce
  • 2 Tbsp Rice Wine Vinegar
  • 2 Tbsp Sugar
  • 2 Red Chillies
  • 80 g Peanuts
  • 400 g Soba Noodles
  • Salt
  • 75 ml Vegetable Oil

Steps

  • Step 1Place the Sichuan peppercorns in mortar and pound with a pestle until ground. Transfer to a large heatproof bowl.
  • Step 2Mince the garlic and ginger. Add that minced mixture to the Sichuan peppercorns along with your dark soy sauce, rice vinegar and sugar.
  • Step 3Heat the vegetable oil to 170°C in a small saucepan over medium heat.
  • Step 4Carefully add the hot oil to the Sichuan peppercorn sauce and mix well to combine.
  • Step 5Cook the noodles in lightly salted water according to the package instructions.
  • Step 6Meanwhile, deseed and thinly slice the red chillies and finely chop or crush the peanuts.
  • Step 7Drain the noodles and add them to the sauce, along with the red chillies and peanuts.
  • Step 8Toss well to coat then plate up, tuck in and enjoy.
