Ingredients
- • 2 Tsp Sichuan Peppercorns
- • 6 Cloves of Garlic
- • 20 g Ginger
- • 3 Tbsp Dark Soy Sauce
- • 2 Tbsp Rice Wine Vinegar
- • 2 Tbsp Sugar
- • 2 Red Chillies
- • 80 g Peanuts
- • 400 g Soba Noodles
- • Salt
- • 75 ml Vegetable Oil
Steps
- Step 1Place the Sichuan peppercorns in mortar and pound with a pestle until ground. Transfer to a large heatproof bowl.
- Step 2Mince the garlic and ginger. Add that minced mixture to the Sichuan peppercorns along with your dark soy sauce, rice vinegar and sugar.
- Step 3Heat the vegetable oil to 170°C in a small saucepan over medium heat.
- Step 4Carefully add the hot oil to the Sichuan peppercorn sauce and mix well to combine.
- Step 5Cook the noodles in lightly salted water according to the package instructions.
- Step 6Meanwhile, deseed and thinly slice the red chillies and finely chop or crush the peanuts.
- Step 7Drain the noodles and add them to the sauce, along with the red chillies and peanuts.
- Step 8Toss well to coat then plate up, tuck in and enjoy.
