Roasted Leeks

Ingredients

  • 4 large raw leeks
  • 1 tbsp cooking fat (I like olive oil or ghee)
  • 0.25 tsp sea salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 whole lemon (juiced)

Steps

  • Step 1Preheat the oven or air fryer to 425 degrees F. Wash the leeks with water and a paper towel. Chop off the bottom inch of the leeks with a knife and dispose of them.
  • Step 2Slice the leeks into 1/4 inch pieces up until you get to the leafy part. You will want to remove that part. Toss the leeks with the remaining ingredients in a bowl and roasted on a sheet pan or in the air fryer for 15-20 minutes until golden brown.
